Preparation
- Place on a greased heat proof plate (can be covered with plastic wrap and refrigerated until ready to steam, but for no longer than three hours).
- Poor boiling water into the lower part of a steamer, coming within one inch of the cooking rack.
- Place plate with wrapped dumplings on steamer rack, over high heat and bring water to rolling boil.
- Cover the pan tightly and steam for thirty minuntes.
- If there is more than one batch, cover finished dumplings to keep them warm, or dumplings can be reheated in the steamer for a minute (keep kettle of boiling water at hand if water in steamer need replenishing).
