How to Fill and Shape Jiaozi
Once you have the filling:
“Taking one wrapper at a time, scoop 1 heaping tablespoon of filling...and put it in the center of the wrapper. Fold the edge over to make a half-moon shape. Then, with your forefinger and thumb, press and twist the edge into small pleats.” (Lin 137). Others would say to simply pinch the edges together to seal them rather than pleating (Chen, Chen, & Tseng 410).
